Pumpkin Seed Crusted Red Snapper

This is one of our favorite dishes from the Elote Cafe Cookbook. We dress it up with salsa, guacamole, roasted pumpkin seeds, some Mexican crema and fresh Oaxaca cheese.

It’s especially easy because it can be prepped in advance, the filets placed on a wire rack and then fried off for 6 mins when your ready.

If you ever find yourself in Sedona, you must find time for a meal at Elote’. No need to plan ahead. Just show up and wait with all the other foodie locals and visitors for a table as they don’t take reservations. So worthwhile I even bought the cookbook after finishing dinner…which I have never done before.
