OK, so do we really need another chicken salad recipe? Well if you have just one, make it this one. Buvette is a sweet little restaurant down in the Village in NYC. Cute place. Their chicken salad is a signature dish during the lunch hour. The Buvette Cookbook is worth getting even if it’s just for this one piece.

Since I can’t seem to plan too far in advance, I often forgo roasting a chicken myself and pick up a Rotisserie bird at my local market. Simple to pull the rest of the ingredients together. Here’s a link to an online version. As you can see, I’m not the only one passionate about this salad.
